Our Raspberry and Pistachio Pavlova gelato mimics the delicate textures of the famous dessert. We combine a meringue infused base with sharp raspberry jam and crunchy pistachio nibs. It is sweet, crisp, and beautifully balanced.
Flavour experience
We start by flavouring our dairy base with a meringue paste. This gives it a sweet, airy flavour that tastes just like the centre of a pavlova. We then cut through this sweetness with a ripple of tart raspberry jam. To finish, we add a pistachio cremino and roasted nibs, introducing a savoury, nutty depth that grounds the sugary fruit notes.
Texture
This gelato is a masterclass in crunch. The base is velvety smooth, but the meringue paste adds a slight stickiness. The raspberry jam provides a fluid, gooey ripple. The real star is the pistachio. The nibs offer a hard, satisfying crunch that contrasts perfectly with the soft cream.
